Why is Cibreo on a site called Food Horrors? Because its ingredients, aroma or texture can surprise people who did not grow up with it. That does not make the dish inferior: this project treats unusual food as culture first, spectacle second.
Ingredients
- chicken livers and hearts
- food-grade combs or other giblets
- egg yolks
- lemon
- butter and broth
How to prepare it
- Clean and cut the giblets.
- Cook thoroughly in butter with a little stock.
- Off the heat, temper egg yolk and lemon with hot cooking liquid.
- Return to gentle heat without scrambling the sauce.
