What it is
Icelandic fermented shark is famous for its ammonia-like aroma and lengthy traditional processing. It should be tasted as a finished product, not recreated at home.
Why is Hákarl on a site called Food Horrors? Because its ingredients, aroma or texture can surprise people who did not grow up with it. That does not make the dish inferior: this project treats unusual food as culture first, spectacle second.
Traditional processing is also needed to make a problematic raw material edible: no DIY.
Ingredients
- commercial hákarl from an authorised producer
- optional rye bread
How to prepare it
- Buy only ready-to-eat commercial product.
- Serve in small cubes at the producer-recommended temperature.
- Do not attempt shark fermentation at home.
Taste, texture and how to serve
Approach the dish with a small tasting portion. The goal is not a stunt: observe aroma, temperature, texture and the traditional accompaniments. Strong flavours become easier to understand when tasted in their original culinary context.
