Why is Surströmming on a site called Food Horrors? Because its ingredients, aroma or texture can surprise people who did not grow up with it. That does not make the dish inferior: this project treats unusual food as culture first, spectacle second.

How to prepare it

  1. Chill and open the can outdoors following producer instructions.
  2. Drain the fish.
  3. Assemble flatbread with potatoes, onion and sour cream.
  4. Observe storage and use-by directions.
