Why is Cooked shirako on a site called Food Horrors? Because its ingredients, aroma or texture can surprise people who did not grow up with it. That does not make the dish inferior: this project treats unusual food as culture first, spectacle second.
Ingredients
- very fresh shirako from a reputable fishmonger
- dashi
- ponzu
- grated daikon
- spring onion
How to prepare it
- Rinse gently and keep chilled.
- Poach in hot dashi until thoroughly cooked.
- Drain carefully.
- Serve with ponzu, daikon and spring onion.
