Why is Tête de veau on a site called Food Horrors? Because its ingredients, aroma or texture can surprise people who did not grow up with it. That does not make the dish inferior: this project treats unusual food as culture first, spectacle second.

How to prepare it

  1. Buy the head already boned and prepared.
  2. Simmer in aromatic broth until fully tender.
  3. Make gribiche with egg, mustard, capers and cornichons.
  4. Slice and serve warm with sauce.
