A fertilised, incubated duck egg that is boiled and eaten from the shell: a Filipino street food with strong visual and cultural impact.

Why is Balut on a site called Food Horrors? Because its ingredients, aroma or texture can surprise people who did not grow up with it. That does not make the dish inferior: this project treats unusual food as culture first, spectacle second.

How to prepare it

  1. Buy balut from a traceable food supplier.
  2. Boil thoroughly according to supplier directions.
  3. Open the top of the shell and eat warm.
  4. Season with salt or vinegar if desired.
