Half a sheep’s head, salted, dried and boiled, traditionally served with potatoes and swede in Western Norway.

Why is Smalahove on a site called Food Horrors? Because its ingredients, aroma or texture can surprise people who did not grow up with it. That does not make the dish inferior: this project treats unusual food as culture first, spectacle second.

  1. Buy a head professionally prepared under local food rules.
  2. Cook according to producer instructions until fully done.
  3. Prepare potatoes and swede.
  4. Serve piping hot.
