Why is Roman-style tripe on a site called Food Horrors? Because its ingredients, aroma or texture can surprise people who did not grow up with it. That does not make the dish inferior: this project treats unusual food as culture first, spectacle second.

- tomato passata
- onion and celery
- Roman mint
- Pecorino Romano
How to prepare it
- Soften onion and celery.
- Add sliced tripe and sauté briefly.
- Pour in tomato and simmer gently.
- Finish with mint and pecorino.
