Why is Pani ca meusa on a site called Food Horrors? Because its ingredients, aroma or texture can surprise people who did not grow up with it. That does not make the dish inferior: this project treats unusual food as culture first, spectacle second.
Ingredients
- cleaned beef spleen and lung
- vastedda-style rolls
- food-grade fat or lard
- optional caciocavallo or ricotta
- lemon
How to prepare it
- Use offal prepared by an authorised operator.
- Boil thoroughly and slice thinly.
- Reheat in hot fat.
- Fill the bread and finish with cheese or lemon if desired.
