Florence’s iconic street food uses the cow’s fourth stomach, simmered in aromatic broth and served in a crusty roll with green sauce and optional chilli.
Why is Lampredotto on a site called Food Horrors? Because its ingredients, aroma or texture can surprise people who did not grow up with it. That does not make the dish inferior: this project treats unusual food as culture first, spectacle second.
Ingredients
- cleaned beef lampredotto
- celery, carrot and onion
- ripe tomato
- parsley, capers and bread
- crusty rolls
How to prepare it
- Make an aromatic vegetable and tomato broth.
- Simmer the lampredotto until very tender.
- Blend parsley, capers and soaked bread into green sauce.
- Slice the meat, dip the bread in broth and assemble.
Taste, texture and how to serve
Approach the dish with a small tasting portion. The goal is not a stunt: observe aroma, temperature, texture and the traditional accompaniments. Strong flavours become easier to understand when tasted in their original culinary context.
