Why is Roman pajata on a site called Food Horrors? Because its ingredients, aroma or texture can surprise people who did not grow up with it. That does not make the dish inferior: this project treats unusual food as culture first, spectacle second.

- tomato passata
- onion
- white wine
- Pecorino Romano
How to prepare it
- Use only professionally prepared pajata.
- Brown onion, add pajata and deglaze with wine.
- Add tomato and cook thoroughly.
- Serve with pecorino or use the sauce for pasta.
